The Year of Turning Sixty
I love cookbooks, and I never would have thought of this combination on my own. This salad of roasted beets and peaches was inspired by Sheila Lukins’ 2003 next-to-last book, Celebrate, which was a gift from my friend Sue.  
I used sherry vinegar, since I didn’t have lemons, and arugula, since it was growing a few steps from my door and endive wasn’t.  It was a delicious part of our anniversary celebration, which we shared with Jo and Jeff.
